Spicy Thai tempeh patties served amongst a delicious reddish chili dipping sauce

Tempeh patties:
  • 1 stem lemon grass
  • 1 clove garlic, chopped
  • 2 light-green onions, chopped
  • 2 shallots, chopped
  • 3 fresh reddish chilies, seeded together with chopped
  • 1-inch slice fresh ginger, chopped
  • generous handful of fresh parsley, chopped
  • 12 oz (340 grams) tempeh, chopped
  • juice from ii limes (4 tablespoons)
  • 1 teaspoon sugar
  • dash of cayenne
  • 3 to four tablespoons unbleached white or spelt flour
  • 1 large egg
  • sea tabular array salt together with fresh cracked dark pepper to taste

Dipping sauce:
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons white vino vinegar
  • 1/4 teaspoon reddish vino vinegar (optional)
  • 2 light-green onions, finely chopped
  • 2 teaspoons sugar
  • 2 fresh reddish chilies, seeded together with finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • pinch of body of body of water salt
Instructions:
