  • 2 tablespoons chickpea flour (besan)

  • 1 large potato, diced
  • 6 large push mushrooms, roughly chopped
  • 2 medium carrots, sliced
  • 2 modest turnips, peeled together with diced
  • 4 tablespoons ruby lentils
  • small handful dried curry leaves or 2 crushed bay leaves
  • 2 cloves garlic, coarsely chopped
  • 1 medium onion, coarsely chopped
  • 1-inch piece fresh ginger, minced
  • 14 oz (410 mL) tin kokosnoot milk
  • 1 teaspoon bounding main salt, or to taste
