Ingredients:
  • 2 ripe ruby mangos, peeled together with shredded
  • 1/3 loving cup dried shredded unsweetened coconut
  • 2 tablespoons diced dried apricots
  • 1 tablespoon fresh orangish juice
  • 1 tablespoon fresh lime juice
  • 1 teaspoon ocean salt
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon paprika
  • 2 light-green chilies, seeded together with finely chopped
  • 2 tablespoons sesame oil
  • 1 teaspoon brownish mustard seeds
  • 1/4 loving cup fresh cilantro, finely chopped
Instructions:
  • In a large bowl, combine the mangos, coconut, apricots, fruit juices, salt, cayenne, paprika together with light-green chilies. Cover the bowl together with marinate for 1 hour.
